I have a long standing disdain for people telling other people what to do "for their own good." Hence the question about the level of moralizing (not that I really think Jeb was moralizing like that, I was just being snarky).

I will however cheerfully listen to someone who knows more about a particular topic than I do. I mean, they know more about the topic than I do! Then I will make my own decisions about the risks involved.

i looked into getting a really good fume hood but i would have needed to install makeup air or it would reverse the flow direction in my furnace chimmeny (bad) so i settled on an adequate fume hood instead

you get to put the meat on a ripping hot pan at the end of sous vide if you want

there's some downsides related to the water content interfereing with a good char but it's totally workable

the time the makeup air system in the labs was down the air pressure from the fume hoods held the doors shut to the point where my weaker colleagues would have trouble opening them
