i'm used to throwing banana peels in the trash, but a couple times recently I've ended up with fruit flies breeding in the trash and i have to throw out the trash bag way before it's full
what's the best way to avoid this problem? putting the peels in a bag that i keep in the fridge and periodically throwing that out doesn't sound very appealing. neither does walking outside to the trash area to throw away just the peel every time i eat a banana. annoying

I have the same problem, I usually just make separate airtight packages for them out of plastic bags I have lying around.

we have a bunch of fruit flys that hang out in our plants so i got some bug traps (basically just bright yellow sticky-tape) that seems to be pretty effective.

Still doing this BTW, coming up on a month. It's not hard to do, I'm hungry every day for about six hours, but it's an ignorable level of hunger.
I like this system because I've always been better with strict rules (no eating between midnight and 4 pm) than general guidelines (eat less).
The trick is that this method is still ultimately about caloric restriction, so you still shouldn't massively pig out in the 8 hours when you can eat. But if you eat reasonable amounts, and stop when you're not hungry, you'll end up eating fewer calories per day. At least, that's my experience.
Anyway, it feels like a sustainable diet, I haven't noticed any negative effects (although the positive effects seem to be pretty minor too), so I'll keep going!

does anyone have any recommendations for easy / very easy ways of cooking chicken?
my go-to for a while was to put it (usually thighs) into a baking tray, apply sauce (usually bbq), and then bake for 30 minutes, but now whenever i do that i am grossed out by the result

maybe this is more 'fast' than 'easy', but cut into small bits and stir fry
if you are more specific about how it grosses you out there might be an easy solution, that is not super different from Actual Cooking Techniques

just something about the way that it turns out - there's like this gloppy stuff (the fat?) and it tastes kinda gross, especially as leftovers

try adding some liquid, such as chicken stock or water with chicken boullion if you don't want to deal with stock going bad

Yeah in a grill pan
Butterfly it so that it's less than an inch thick, slice through it again if you have to
Get it just a little wet and completely coat it in a seasoning like Badia Sazon Complete or something like that
Grill pan medium heat, six minutes on a side
Now if you had had more time to prepare, instead of seasoning, marinate it for three hours in a mojo criollo marinade
