in a roguelike you're usually trying for the same goal, an outright win of the game
in outer wilds, each run can often have wildly different purposes. sometimes you're pursuing a very specific goal or pushing at a specific puzzle, sometimes you're exploring uncharted territory for the first time, sometimes you're just tooling around and having fun with systems you're already familiar with
you're also never going to complete the game in a single run of outer wilds. this is true of roguelikes in practise too, but structurally you at least in theory could from the very outset

one of the things i think is great about the base game is how it's so possible to get completely distracted from what you were 'intending' to do in a given run, and still come away feeling like you learned something new, or accomplished something cool or useful

Do you have the DLC installed?
If so -- I imagine that a person who had never played the game before, and plays it for the first time with the DLC installed, might not know which parts of the game are DLC and which aren't

ive played the base game to completion already in the past, so i'm aware what is and isn't DLC content and all that

It is the best speed game of all time hands down. I am currently just constantly running SMZ3 which is half Super Metroid and I have most of the tech down. I can't reliably do a 2 tap short charge or do any of the fancy shinespark tricks but I'm getting better.
By lava boss do you mean Ridley or the one where you have to shoot at its mouth to push it back (Crocomire)?

given how fucking impossible it is structurally to integrate content into this game i think its about as well-integrated as one could reasonably expect

Archaeologist Edition is indeed the one you want. You're looking for the base game + the echoes of the eye (I) DLC to play this.

The one with the heart! That game is also sweet as hell.
In the randomizer, you sometimes get to Croc with charge beam and plasma, which for some reason glitches him out and one shots him. It's very satisfying and one of those things that would never come up in a vanilla playthrough.
